Ingredients
1cupgluten-free rolled oats
2/3cupsunsweetened toasted coconut flakes
1/8tspnutmeg
1tspcinnamon
Pinchof salt
1/2cupcreamy peanut butter
1tspvanilla
2tbspmaple syrup
1/4cupchocolate chips or raisins
Instructions
Mix oats, coconut, nutmeg, cinnamon and salt in a large bowl.
Stir in peanut butter, vanilla and maple syrup. Then add chocolate chips or raisins.* If the dough is crumbly add 1-3 tsp of warm water. This may happen depending on the moisture and consistency of the peanut butter used.
Cover and refrigerate for 20 minutes.
Roll into balls approx. 2 tbsp large. It should make approximately 10 balls.

Notes
You can store these in the refrigerator for 3-4 days or keep them in the freezer for 2-3 months for a cool and convenient snack.
