Gluten-Free Zucchini Oatmeal Bread

- 2 cups oat flour
- ½ cup whole oats
- 1 tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- 1 tsp cinnamon
- ½ cup brown sugar or coconut sugar
- ⅓ cup melted coconut oil
- ¼ cup milk of choice
- 1 tbsp ground flax
- 2 large eggs
- 1 ½ cups grated zucchini 1-2 zucchini; no draining, loosely packed
- ½ cup chocolate chips or chopped walnuts
Preheat the oven to 350°F (175°C). Line a 9x5 loaf pan with parchment paper and set aside.
In a large bowl, whisk together 2 cups of oat flour, ½ cup oats, 1 tsp baking soda, ½ tsp baking powder, ¼ tsp salt, 1 tsp cinnamon and ½ cup sugar.
In a separate medium bowl, mix together ⅓ cup melted coconut oil, ¼ cup milk, 1 tbsp flax, 2 eggs, and 1 ½ cups grated zucchini.
Pour the wet ingredients mixture onto the bowl with the dry ingredients. Mix until smooth.
Fold in ½ cup chocolate chips or walnuts.
Let the batter sit for 10 minutes.
Pour into the prepared pan.
Bake for 50–60 minutes, until a toothpick comes out mostly clean.
Let the bread cool completely in the pan before slicing.

Store leftovers in an airtight container at room temperature for up to 2 days or in the fridge for up to 5 days. Reheat in the microwave for 5 - 10 seconds. Otherwise it can be a bit crumbly (since the recipe doesn't contain gluten).
For longer storage, wrap slices in plastic wrap or aluminum foil and freeze. Reheat in the microwave for 15 - 30 seconds (take out of the foil first!).
