Air Fryer Zucchini Fries with Garlic Yogurt Aioli

Zucchini fries
- 2 Medium zucchini
- Olive oil cooking spray
- ½ cup Almond flour
- 1 tbsp Nutritional yeast
- ½ tsp Garlic powder
- ½ tsp Black pepper
- ¼ tsp Salt
Garlic yogurt aioli
- 1/4 cup Plain Greek yogurt or non-dairy yogurt
- ¼ cup Mayonnaise or vegan mayonnaise
- ¼ tsp Garlic powder
- 1 tsp Lemon juice optional
Slice 2 zucchini into fry-shaped sticks (about ½-inch thick). Place in a medium bowl and lightly spray with oil.
In a small bowl, mix ½ cup almond flour, 1 tbsp nutritional yeast, ½ tsp garlic powder, ½ black pepper, ¼ tsp salt.
Pour coating directly into the bowl with the zucchini. Toss until the fries are lightly coated.
Spray the bottom of the air fryer basket with oil to prevent sticking.
Place the zucchini fries in the basket in a single layer. Depending on the size of your air fryer, you may need to do two batches.
Spray lightly with oil (optional, but makes them crispier). Cook at 400°F (200°C) for 12-14 minutes, until golden brown.
In a small bowl, stir together ¼ cup yogurt, ¼ cup mayonnaise, ¼ tsp garlic powder, and 1 tsp lemon juice, if using.
Dip zucchini fries in garlic aioli or other favorite sauce and enjoy!
You can sub the garlic yogurt aioli for your favorite bottled ranch dressing, aioli, blue cheese dip, or marinara sauce.
Refrigerate: Keep leftovers in an airtight container in the fridge for up to 3 days.
Reheat: In the microwave or in your air fryer for a few minutes.
Freeze: Not recommended. Zucchini can become soggy once thawed.
