Ingredients & Substitutions

What you’ll need
Zucchini fries:
- Fresh zucchini: Slice zucchini into zucchini sticks (about ½-inch thick).
- Olive oil spray: Lightly coat the zucchini strips to help the breadcrumb mixture stick. For best results (aka to make extra crispy zucchini fries), spray the fries again before you put them in the air fryer.
- Almond flour: A gluten-free alternative to plain breadcrumbs or panko bread crumbs.
- Nutritional yeast or parmesan cheese: Adds a savory cheesy flavor.
- Garlic powder, black pepper, Italian seasoning, and a pinch of salt: For seasoning.
Garlic yogurt aioli:
- Plain Greek yogurt: Can also use non-dairy yogurt.
- Mayonnaise: Can you vegan mayo if needed.
- Garlic powder and Lemon juice: Add for flavor.

Step 2: Mix the coating
Step 3: Coat the zucchini

Step 4: Air fry

Step 5: Make the garlic aioli
Step 6: Serve

Lower Effort Tips
- Use a store-bought dip. You can sub this garlic yogurt aioli for your favorite bottled ranch dressing, garlic aioli, blue cheese dip, or marinara sauce.
- Use parchment paper. Lining your air fryer basket with parchment paper keeps cleanup simple and helps prevent sticking, especially if you’re cooking multiple batches.
- Batch prep. You can double the recipe and refrigerate half of the zucchini strips (uncooked) in an airtight container. They’ll be ready to toss in the air fryer for a quick snack later.
Storage & Reheating Tips
These fries disappear fast, but on the off chance you have a few left, here’s what to do:
- Refrigerate: Keep leftovers in an airtight container in the fridge for up to 3 days.
- Reheat: In the microwave or in your air fryer for a few minutes.
- Freeze: Not recommended. Zucchini can become soggy once thawed.
